The location of this Sauvignon Blanc vineyard experiences a nice warm temperature during the day, which allows the grapes to ripen, providing the bright tones on the nose and the palate. At night, the vineyard cools off dramatically, preserving the natural acidity, and contributing to the freshness of this varietal.
The grapes are hand harvested, and the juice was cold-fermented in neutral oak barrels, which allows the fermentation to 'breathe', an important component for aromatic and texture development. The finished wine was aged in the same barrel for six months prior to bottling.
